Granola fruit tart

Prep. Time: 10 min - Cook Time: 20 min - Total Time: 30 min - Yield: 3 servings

Ingredients

Bowl:

  • 2 cups oats

  • 1 cup pecans

  • 1 tsp chia seeds

  • 1 tsp ground cinnamon

  • 1/2 dates or dried fruits

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 1/4 date syrup

  • (optional) 1/4 cup chocolate chips or coconut flakes

Toppings:

  • 1 cup berries

  • 2 cups lupine yogurt

Instructions

  1. Pre-heat oven to 180°.

  2. Mix the oats, pecans, chia seeds, melted coconut oil, date syrup, vanilla extract, cinnamon, dried fruits together in a bowl until combined.

  3. Portion the granola mixture evenly between 3 mini tart pans, pressing the firmly into bottoms and sides of the pans. Then place the tart pans in the oven for about 20 minutes, until golden. Remove and cool completely in the pan before removing.

  4. Top with yogurt and berries.

  5. Serve right away.

Good to know!

  • You can use almond/soya/coconut yogurt instead of lupine yogurt.

  • Syrup or can be substituted for honey.

  • Place the granola in a ziploc bag and store for up to 7 days.
