Thai Black Sticky Rice

Ingredients
Rice:
350 ml. coconut milk
3 tbsp. of coconut sugar
1 cup black sticky rice
½ tsp. sea salt
1 tsp. vanilla extract
Toppings:
1 mango, peeled and sliced
½ cup of coconut flakes
Mint leaves
Instructions
Soak the rice in warm water overnight, rinse and drain.
Place the rice, coconut milk, vanilla and sugar in a saucepan and bring to boil. Reduce heat and simmer uncovered for 40 minutes (stir occasionally)
Top with the topping ingredients.
Serve right away.
