Ingredients
220g unsalted butter (at room temperature), plus extra for greasing
6 eggs, separated to white and yolks
100g all purpose flour
50g cornstarch
120g granulated sugar
110g icing sugar
2 tbsp vanilla extract
200g dark chocolate,
40 ml spiced rum
1/4 salt
Instructions
Preheat an oven to 200 degrees C.
Grease the ring and base of a springform cake tin with a pinch of butter.
Combine 200g butter egg yolks, flour, cornstarch, icing sugar, vanilla extract.
Separately, beat white eggs and salt. Add the granulated sugar, little by little, while beating by hand or machine until thick and creamy. Fold into the batter with the large metal spoon.
Spread enough batter to cover the base into the pan and cook under the grill for 2 minutes (until golden). Take the pan out of the oven.
Spread another thin layer of batter on top, and return to the grill until golden.
Continue layering until the batter is used up.
Leave to cool overnight.
Melt the chocolate with 20g butter and rum.
Set the cake on a serving plate and spread the chocolate sauce over the top with a spatula.
