Matcha pancakes

Ingredients

Pancakes:

  • 80 g all-purpose flour

  • 1/4 coconut sugar

  • 1 tsp. baking powder

  • 1 tbsp. matcha (green tea powder)

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 3/4 cup vanilla almond milk

  • 1/4 tsp salt

Toppings:

  • Berries

  • Coconut yogurt

  • Pistachio seeds

Instructions

  1. Whisk together the almond milk, coconut oil, vanilla extract in a large bowl until combined.

  2. Add the flour, matcha powder, baking powder and salt

  3. Heat a small saucepan over medium-low heat. Grease it lightly with coconut oil.

  4. Portion 3 spoonful of batter onto the center of the pan and cook until small bubbles start to appear. Flip the pancakes and cook them for 1 minute.

  5. Top with yogurt, berries and pistachio seeds.

  6. Serve right away.

Good to know!

  • You can use other yogurt instead of coconut yogurt.

  • You can serve these pancakes with traditional maple syrup.
