Matcha pancakes

Ingredients
Pancakes:
80 g all-purpose flour
1/4 coconut sugar
1 tsp. baking powder
1 tbsp. matcha (green tea powder)
1/4 cup melted coconut oil
1 tsp vanilla extract
3/4 cup vanilla almond milk
1/4 tsp salt
Toppings:
Berries
Coconut yogurt
Pistachio seeds
Instructions
Whisk together the almond milk, coconut oil, vanilla extract in a large bowl until combined.
Add the flour, matcha powder, baking powder and salt
Heat a small saucepan over medium-low heat. Grease it lightly with coconut oil.
Portion 3 spoonful of batter onto the center of the pan and cook until small bubbles start to appear. Flip the pancakes and cook them for 1 minute.
Top with yogurt, berries and pistachio seeds.
Serve right away.
Good to know!
You can use other yogurt instead of coconut yogurt.
You can serve these pancakes with traditional maple syrup.
