Ingredients
4 large croissant
4 cups milk
2 cups chopped nuts (almonds, pistachios)
1/4 cup shredded coconut
1/2 cup granulated sugar
1/4 cup raisins (soaked in water for 40 minutes)
1 tsp vanilla extract
2 cups heavy whipping cream
4 tbsp powdered sugar
Instructions
Preheat an oven to 200 degrees C.
Place croissants in the oven for 10 minutes for crunchiness.
In a medium saucepan, over medium-high heat, stir together the milk and sugar, until the sugar dissolves, then bring to a boil. Remove from heat and add the vanilla extract.
In an oven safe medium round baking dish/pan, cut croissant in medium-large pieces and arrange in a first layer in the pan.
Place flakes, nuts, all purpose flour, sugar, butter, baking soda, and honey in a large mixing bowl and them mix it.
Sprinkle the nuts, raisins (drained from water), shredded coconut, over the first layer. Then cover with a second layer of croissant pieces.
Pour the boiling milk mixture over this mixture (making sure that all the surface gets soaked with milk)
Combine 2 tbsp powdered sugar with the heavy whipping cream and cover the top with a thick layer of this cream.
Dust 1 tbsp powdered sugar on top.
Bake for 20 minutes until golden brown.
