colombian coconut rice with shirmps

Ingredients
Rice:
1 can of coconut milk
1 tbsp. of brown sugar
1 cup rice, soaqued
2 cups water
1 tbsp. unflavored caramel color
Shrimps:
1 cup medium shrimp
2 cloves garlic, minced
2 tbsp. olive oil
1 tbsp. lime juice
Instructions
Heat coconut milk in a saucepan over high heat until simmering.
Reduce to medium and cook 20 minutes until reduce the milk (dark brown).
Add rice, sugar, color and salt. Let it cook for 2 minutes.
Add the water and bring to a simmer over high heat for 5 minutes and reduce, cover and cook for 15 minutes.
Put the oil in a large skillet over medium high heat and add the garlic, stirring frequently,
Add shrimps, salt and lemon and let it cook for 10 minutes.
Serve immediately in a bowl with the coconut rice and enjoy :)
