Avocado salad smoothie

Ingredients
Bowl:
1 ripe avocado, stoned and peeled
1 cup spinach (frozen)
1 small cucumber
1 cup chickpeas, rinse and drain
1 tbsp. peanut butter
Juice from 1 lime
½ red apple
· Pinch of salt and pepper
Toppings:
1 cup chickpeas, rinse and drain
1 tbsp. pumpkin seeds, roosted
1 tbsp. soybean sprouts, washed
1 tsp. chili flakes
1 cup cherry tomatoes, half sliced
Instructions
Place all the bowl ingredients in a blender and puree until smooth. Pour into 2 salad bowls.
Top with the tomatoes, soybean, chickpeas, pumpkin seeds, chili flakes, and additional toppings, as you like.
Serve right away.
