Thai Coconut Peanut Shrimp

Ingredients
2 tbsp coconut oil
1 tbsp sesame oil
600g shrimps, count peeled and deveined
1 1/2 can coconut milk
3 garlic cloves, minced
1 tbsp fresh ginger, minced
3 tbsp lemon juice
1/3 crunchy peanut butter
1/3 cup chopped peanuts
1 cup fresh grated coconut
2 tbsp honey
1 tbsp rice wine vinegar
2 tbsp soy sauce
Chili flakes
Salt and freshly ground black pepper
Chopped cilantro leaves for garnish
Instructions
Heat sesame oil in a medium saucepan over medium heat and sauté garlic and ginger. Add the shrimps and season with salt and pepper and let it cook for 3 minutes on each side. Remove from the pan and set aside.
Heat coconut oil in the same saucepan over medium heat and add add the coconut milk, lemon juice, honey, soy sauce, rice vinegar, peanut butter, chopped peanuts, black pepper, chilli flakes and salt. Let it cook for 15 minutes until a creamy consistency.
Add the shrimp back to the pan and serve.
