Super green bisque

Ingredients
1 lt vegetable stock
1 cup frozen edamame
2 cups frozen peas
1 cup broccoli heads
100g spinach leaves
1 garlic leave
1/2 big onion
1 tbsp olive oil
200 ml almond cream
1/2 cup almond meal (ground almonds)
1 tbsp lemon juice
1/2 cup mint leaves
1/4 cup parsley leaves
1 tbsp grated lemon rind
Sea salt and cracked back pepper
To garnish
Labneh/plain Gree-style yoghurt and sliced bread to serve
A pinch of Chili flakes, pumpkin oil and pumpkin seeds to serve

Instructions
Heat the oil In a large saucepan over high heat. Place the whole onion and garlic for 3 minutes.
Add the stock and bring to the boil.
Add the rest of the ingredients and cook for 20 minutes.
Blend the soup with a hand-held stick blender until smooth.
Serve and top with the garnish ingredients.
