Red quinoa bowl

Ingredients
Bowl:
100 g (1cup) red quinoa
1 avocado
2 radishes
50 g blueberries
40 g arugula
1 cup pea shoots
30 g whole unsalted almonds
Dressing:
3 tbsp. fresh lime juice
2 tbsp. olive oil
Instructions
Rinse the quinoa in a fine-mesh colander under cold water.
Combine the rinsed quinoa with 2 cups of water and a pinch of salt in a medium saucepan. Bring it to a boil over medium-high heat. Decrease the heat to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 15 minute. Remove from heat, let stand for 5 minutes, covered. Remove the lid and fluff the quinoa with a fork.
Wash and dry the pea shoots, radishes, blueberries, and arugula.
Slice avocado and radishes into thin slices.
Coarsely chop the almond.
To serve, place the quinoa in serving 2 bowls or plates. Top with pea shoots, avocado, blueberries, radishes, arugula, and almonds.
Top with fresh ground pepper and salt.
Serve right away.
