Avocado & edamame forest

Ingredients
Avocado:
1 large ripe avocado
½ cup edamame beans
1 scallion, sliced thinly
1 cup cherry tomatoes
1 tbsp. olive oil
1 tbsp. lime juice
crushed red pepper flakes
Forest:
½ cup rocket leaves, washed
½ cup arugula leaves, washed
½ cup watercress leaves, washed
½ cup lettuce leaves, washed
1 tbsp. olive oil
1 tbsp. lime juice
Instructions
Toast properly the bread.
In a saucepan over medium heat two cups of water and add the edamame. Bring water to a boil and simmer for 5 minutes.
Mash the edamame beans and the avocado in a small bowl. Add the scallion pieces.
Whisk this green paste with 1 tbsp. oil, 1 tbsp. lemon juice, pepper flakes, salt and pepper until combined.
In a saucepan over medium heat, grill the tomatoes for 5 minutes until soft.
Drizzle the leaves with the oil and lime juice.
Spread the paste over the toasted bread. Top with the tomatoes and leaves, add a pinch of salt and pepper, and enjoy J.
