Avocado & edamame forest

Ingredients

Avocado:

 

  • 1 large ripe avocado

  • ½ cup edamame beans

  • 1 scallion, sliced thinly

  • 1 cup cherry tomatoes

  • 1 tbsp. olive oil

  • 1 tbsp. lime juice

  • crushed red pepper flakes

Forest:

  • ½ cup rocket leaves, washed

  • ½ cup arugula leaves, washed

  • ½ cup watercress leaves, washed

  • ½ cup lettuce leaves, washed

  • 1 tbsp. olive oil

  • 1 tbsp. lime juice

Instructions

  1. Toast properly the bread.

  2. In a saucepan over medium heat two cups of water and add the edamame. Bring water to a boil and simmer for 5 minutes.

  3. Mash the edamame beans and the avocado in a small bowl. Add the scallion pieces.

  4. Whisk this green paste with 1 tbsp. oil, 1 tbsp. lemon juice, pepper flakes, salt and pepper until combined.

  5. In a saucepan over medium heat, grill the tomatoes for 5 minutes until soft.

  6. Drizzle the leaves with the oil and lime juice.

  7. Spread the paste over the toasted bread. Top with the tomatoes and leaves, add a pinch of salt and pepper, and enjoy J.
